Panera Bread, 1601 Willow Lawn Drive – The following violations were reported during a routine inspection: in-use knife stored in dirty crevice of prep unit; gasket on lowboy isn’t attached to the door; observed dust and food debris buildup on prep table shelves, salad bowl and to-go container holders on prep line, wire storage racks above three-compartment sink, wire storage racks on prep line and in dry storage, on top of microwaves and under ovens.

JJ’s Grille, 10298 Staples Mill Road – The following violations were reported during a routine inspection: observed poor handwashing procedures; employees are not aware of or are not monitoring the cook temperatures of time/temperature control for safety (TCS) foods; employees are not aware of or are not practicing proper methods to rapidly cool TCS foods; one or more of the elements of an effective employee health policy is either missing or incomplete (there is no verifiable policy); bar hand sink doesn’t have handwash signgage posted and there are no paper towels; raw chicken stored over raw beef in reach-in cooler on hot line; dried food debris found on fry cutter; dish machine isn’t sanitizing; observed mold on interior and exterior of ice machine; facility is cooking raw animal foods using a non-continuous cooking process but does not have the proper written procedures in place; temperature of cooked crabcake is too low; temperature of casserole under heat lamps is too low; several TCS foods on the hot line are elevated (cod, oysters, chicken, tomatoes and blue cheese); several food items in the walk-in cooler are past their expiration dates; time isn’t being tracked for seasoned flour on hot line; pesticides are being stored in the kitchen; improper cooling methods observed for chicken wings cooked earlier (cooling in deep containers covered tightly with lid); salmon is thawing in reduced oxygen packaging; observed staff with very long hair not wearing proper hair restraints; to-go boxes on right side of hot line are stored uninverted; reach-in cooler on hot line has torn door gaskets; deep fryer baskets are in disrepair; walk-in cooler door handle is broken; there are large gaps between hood filters in hood system; cutting boards throughout kitchen are scratched; several items are dirty (cooler door gaskets throughout kitchen, bar area cooler door gaskets and wine cooler wire racks); exposed air filter on reach-in cooler is very dusty; there is heavy grease buildup on sides of hot line equipment; both walk-in coolers have dusty and moldy fan guards; soda gun is leaking at the bar; three-compartment sink faucet is leaking; mop sink doesn’t have a dual check valve installed; dumpster doors were left open; there is a missing ceiling tile next to hoods; observed dried food debris and stains on walls under dish machine; floor drains throughout kitchen are dirty; employees’ personal items are stored on clean dish rack.

JULY 10

Wendy’s, 4609 Williamsburg Road – The following violations were reported during a routine inspection: temperature of raw beef in reach-in cooler is elevated; an employee is wearing jewelry while preparing food; walk-in cooler storage racks are rusted; plastic hot holding pans are heavily stained; observed buildup of grease and food debris on surfaces of fryers, hood systems, suppression nozzles, walk-in cooler wire racks, touchpads and on sides of hot holding equipment; there are areas of low grout and cracked floor tiles throughout the kitchen; there is grease buildup on floor under and behind fryers and in walk-in freezer.

Ephah Caribbean Food, 3302 Williamsburg Road – The following violations were reported during a routine inspection: temperature of vegetable fried rice in walk-in fridge is elevated; rice and fish cakes in walk-in fridge are past their expiration dates; temperatures of cooked jerk chicken and rice in reach-in fridge are elevated because of improper cooling methods (stored in covered containers); in-use utensils are stored in ambient temperature standing water; there is no air gap present on three-compartment sink.

JULY 11

Funny Bone Comedy Club, 11800 West Broad Street – The following violations were reported during a routine inspection: facility couldn’t provide written procedures for cleaning up vomit/diarrhea; dented can found stored on rack; facility couldn’t provide a food probe thermometer; take-out containers are stored uninverted on a dirty shelf; cutting boards are scratched and stained; several items/areas are dirty (walk-in cooler vent and racks, dish storing rack, reach-in freezers, ceiling vents throughout kitchen, beer chest bottom in main bar, and shelf storing glass cups); mop area floor is unsealed.

City Lights of China, 12391 Gayton Road – The following violations were reported during a routine inspection: wonton strips are stored in contact with a used cardboard box; similar-looking spices on wok cart and bulk fry ingredient bins are unlabeled; to-go containers are stored unprotected on heavily dusty/greasy shelves above prep unit; metal wires are bending and broken on fryer baskets; door on large chest freezer is in disrepair; walk-in cooler wire racks are rusted; observed dirty cardboard lining shelves and other surfaces throughout the kitchen; observed buildup of dust, grease and food debris on surfaces of wok station pipes, prep shelves, walk-in cooler wire racks, portable fans, sides of prep unit and fryers; unnecessary items to the operation or maintenance of the establishment need to be removed; food debris and grime found on floors throughout kitchen.

A Taste of Nostalgia Cereal Bar, 1420 North Parham Road – The following violation was reported during a routine inspection: wire rack next to three-compartment sink is rusted.

JULY 12

Sandston Bistro & Shake, 18 East Williamsburg Road – The following violations were reported during a follow-up inspection: raw chicken and beef stored next to ready-to-eat foods like cheese in the top of the make table; observed some food debris on slicer blade; temperature of provolone cheese in make table is elevated.

Starbucks inside Publix, 4591 South Laburnum Avenue – No violations reported during a routine inspection.

JULY 15

Baker’s Crust Artisan Kitchen, 11800 West Broad Street – The following violations were reported during a follow-up inspection: temperatures of crepe batter, basil pesto, spinach and raw tuna in reduced oxygen packaging in saute unit are elevated; saute refrigerator isn’t working despite service and may no longer be used; temperature of cut tomatoes in pizza unit is elevated; tuna was thawed in reduced oxygen packaging under running water; cutting boards in storage are heavily scratched.

JULY 16

Marco’s Pizza, 7000 Forest Avenue – The following violations were reported during a routine inspection: sanitizer concentration level is at 0 ppm in three-compartment basin and bucket; to-go containers are stored unprotected on a greasy rolling cart; prep unit cutting board is heavily scratched and stained; strainer used to rinse veggies is in disrepair; racks in cooler are rusted; observed flour and food debris buildup on storage racks, shelves, walk-in cooler fan system and on top of pizza oven.
