AARP Virginia, Mercy Chefs to host free Zoom series spotlighting healthy recipes on a budget

Portsmouth-based Mercy Chefs and AARP Virginia have announced a new partnership to spotlight food insecurity while also helping people cook healthy meals on a budget.

The organizations will host “Dinner in a SNAP!” – an online series of free cooking demonstrations that will take place each Wednesday in September, from 5 p.m. to 5:45 p.m., on Zoom. The series will demonstrate how to cook healthy meals using ingredients that can be purchased with Supplemental Nutrition Assistance Program (or SNAP) benefits.

Participants must register for the individual demonstration, or demonstrations, that they want to view.

The series will include the following recipes (click each to register):

• Sept. 4 – Shepherd's Pie with Peas and Carrots;

• Sept. 11 –  Braised Beef Goulash with Macaroni and Corn;

• Sept. 18 – Potato Chip Encrusted Chicken Legs with Ranch Potatoes and Green Beans;

• Sept. 25 –  Sautéed Snapper with Lemon Rice and Cole Slaw.
